Peach Cobbler Mug Cake

The single-serving dessert you didn’t know you needed! Try this recipe when you’re craving pie or cobbler but are short on time (and looking for something a little more macro-friendly). The juicy peaches combined with a hint of butter, syrup, and graham cracker crunch create a melt-in-your-mouth combo that will have you thanking us later. Yet, the best part may be that this recipe is crafted for convenience, requiring just a few ingredients and a microwave. No bake for the win!

PEACH COBBLER MUG CAKE

INGREDIENTS

  • ¼ c (26g) graham cracker crumbs
  • 2/3 scoop (21g) vanilla protein powder
  • ½ c (124g) sliced peaches in juice
  • 1 tbsp (14g) light butter
  • ¼ c (60mL) sugar-free pancake syrup

DIRECTIONS

1. Mix the dry ingredients in a bowl or mug before stirring in the syrup and butter
2. Once evenly mixed, add the peaches, limiting the amount of liquid, and gently stir
3. Microwave for 2:30 – 3:00 or until the center is mostly solid. Some remaining liquid toward the bottom is normal.
4. Enjoy!

Tips:
• Better to slightly undercook than to overcook.
• Option to top with vanilla ice cream. Be sure to account for macros.
