Almond Parmesan Fish Chips

Get the taste of the seaside from the comfort of your kitchen with these healthier fish and chips! Bake in the oven, or try these in your air fryer for an extra-crispy fish dish!

Almond Parmesan Fish Sticks and Chips

Ingredients:
Chips:

  • 1 medium (200g) potato, cut into wedges
  • 2 medium (390g) zucchini, cut into sticks
  • 2 medium carrots (120g), cut into sticks
  • 1 tsp paprika
  • Pinch sea salt and pepper
  • Cooking spray

Fish sticks:

  • 4 medium cod filets, cut into 1-inch strips
  • ½ cup almond flour
  • 6 tbsp  parmesan cheese, grated
  • 1 tsp smoked paprika
  • 1 large egg, whisked
  • Pinch sea salt and pepper
  • Cooking spray
  • Parsley, chopped to garnish (optional)

Directions:

  1. Preheat the oven to 400°F/204°C. Line 2 baking sheets with foil. Spray both sheets with cooking spray.
  2. Add potato, zucchini, and carrots onto the baking sheet. Spray liberally with cooking spray. Season with paprika, salt and pepper. Bake for 25-30 minutes, or until golden and crisp, turning halfway through.
  3. Meanwhile, make the fish sticks: add almond flour, cheese, and paprika to a shallow dish. Add the whisked egg to a second dish.
  4. Dip the fish into the egg, and press into the almond flour mixture, being sure to cover all sides of the fish.
  5. Place fish on a baking sheet.
  6. Bake 11-14 minutes, flipping and spraying with additional cooking spray halfway through
  7. Serve fish with “chips” and optional parsley. Enjoy!
