Peppermint Chocolate Energy Bites
- Yield: 26 servings
- Serving Size: 1 bite
Ingredients
- 1 cup (99g) chocolate protein powder
- 2/3 cup + 1 Tbsp (207g total) natural almond butter
- 3 Tbsp (52g) honey
- 1 Tbsp (8g) cocoa powder
- 1⁄4 tsp salt
- 1⁄4 tsp peppermint extractOptional chocolate candy cane drizzle:
- 1⁄4 cup (54g) dark chocolate chips, melted
- 1⁄2 tsp coconut oil
- 1⁄4 cup (41g) crushed candy canes (~3 canes)
Directions
- Line a baking sheet with parchment paper.
- Mix all ingredients (except for optional drizzle ingredients) in a large bowl. Don’t be afraid to use your hands!
- Roll the dough into 1 Tbsp balls and place onto the baking sheet.
- The dough may be slightly crumbly. Squeeze the dough ball in your hands, and it should stick together! If not, add a tablespoon of almond butter or honey.
- Place bites into the fridge while you make the drizzle.
- If you are skipping the drizzle, enjoy!
For the drizzle
- Melt chocolate chips in a small microwave-safe dish for 60 seconds. If not fully melted, continue to microwave in 15-second intervals until melted.
- Stir in coconut oil.
- Using a small whisk or fork, drizzle the chocolate onto bites.
- Immediately sprinkle with crushed candy cane pieces (the chocolate will start to harden quickly if the bites are cold!).
Notes:
- These are a great balanced grab-and-go snack!
- Add another tablespoon of almond butter or honey if the dough is too crumbly to stick together.
- Store in an air-tight container in the refrigerator for up to 5 days.
- Freeze for up to 2 months in an air-tight container.
