Pulled Chicken Nachos

The ultimate party food is leveling up. No, nachos aren’t off the table, in fact, they can be as delicious as they are nutritious. Substitute zucchini chips for corn chips, and toss in a few grain-free tortilla chips for added crunch. Topped with a healthy dose of protein from pulled chicken (hello, leftovers!), black beans, cheese, and Greek yogurt, this Pulled Chicken Nachos recipe is perfect for anything from game night to dinner parties.

INGREDIENTS
Serves:4

  • 3 medium (600g) zucchinis, thinly sliced into rounds
  • 60g grain-free tortilla chips (like cassava flour or coconut based)
  • 300g pulled chicken breast
  • 1 cup (172g) black beans, drained and rinsed
  • 1 cup (115g) shredded cheddar cheese, low fat
  • ¼ cup (65g) salsa
  • ½ (70g) avocado, diced
  • ¼ cup plain greek yogurt, non fat
  • ½ cup (90g)  tomatoes, chopped
  • ¼ cup cilantro, chopped

 

DIRECTIONS

  • Use a mandoline slicer to slice the zucchini into thin 1/8th inch slices.
  • Spray the air fryer basket with cooking spray, add zucchini in a single layer and season with salt and pepper. Air fry for 10-12 minutes, flipping halfway through, or until crisp.
  • Once done, set aside.
  • Preheat the oven to 350°F/176°C. Line a baking tray with foil or baking paper.
  • Add the zucchini and tortilla chips to the tray in an even layer.
  • Top with chicken breast, black beans, and cheese.
  • Cook for 8-10 minutes or until the cheese is fully melted.
  • Top with salsa, avocado, yogurt, tomato and cilantro.
  • Enjoy!
