Lean chicken breast is marinated in a flavorful combination of lemon, garlic, herbs, and spices and grilled to juicy perfection. Have leftovers or prefer to prep in advance? Grilled Chicken Skewers with Greek Salad

Chicken Skewer Ingredients:
- 1 lb (454g) chicken breast, cut into 1-inch cubes
- 2 tbsp (26ml) olive oil
- 3 tbsp (46g) lemon juice
- 3 cloves (9g) garlic, minced
- 2 tsp oregano
- 1 tsp smoked paprika
- 1 tsp dill, dried
- ½ tsp thyme
- ½ tsp sea salt
To assemble: 4 skewers
Greek Salad Ingredients:
- ½ (150g) English cucumber, chopped
- 2 medium (245g) tomatoes, cut into wedges
- ¼ medium (28g) red onion, thinly sliced
- ½ cup (80g) pitted kalamata olives, whole
- 3 tbsp (28g) feta cheese, crumbled
- 1 tbsp (13g) olive oil
- 1 tbsp (15g) lemon juice
Preparation:
- In a medium bowl, combine olive oil, lemon juice, garlic, oregano, smoked paprika, dill, thyme and salt.
- Add the chicken, stirring to combine. Cover, and let marinate for at least 1 hour in the refrigerator.
- Thread the chicken onto skewers.
- Preheat the grill to medium heat. Add the skewers and cook for 9-11 minutes, turning occasionally, until the chicken is fully cooked.
- Meanwhile, combine all salad ingredients in a bowl.
- Divide salad, and top with chicken skewer. Enjoy!
