Spicy Orange Pork Tenderloin and Rice

Spicy Orange Pork Tenderloin and Rice

Ingredients

  • 2.5 lbs pork tenderloin
  • 1 jar (13.5 oz) sugar-free orange marmalade
  • 3 tbsp (45g) chili garlic sauce
  • 2 tbsp (30mL) rice vinegar
  • 2 c (184g) instant rice

Directions

  1. Add pork tenderloin to a crockpot.
  2. Mix the orange marmalade, chili garlic sauce, and vinegar together in a bowl.
  3. Pour the spicy orange mixture over the pork tenderloin.
  4. Cook on high for 3.5 to 4 hours.
  5. When the pork is cooked through, remove the pork and add the rice to the remaining sauce. Continue cooking on high for 15-20 minutes or until very little liquid remains.
  6. Serve sliced pork over rice. Add veggies!
