Spicy Orange Pork Tenderloin and Rice

Ingredients
- 2.5 lbs pork tenderloin
- 1 jar (13.5 oz) sugar-free orange marmalade
- 3 tbsp (45g) chili garlic sauce
- 2 tbsp (30mL) rice vinegar
- 2 c (184g) instant rice
Directions
- Add pork tenderloin to a crockpot.
- Mix the orange marmalade, chili garlic sauce, and vinegar together in a bowl.
- Pour the spicy orange mixture over the pork tenderloin.
- Cook on high for 3.5 to 4 hours.
- When the pork is cooked through, remove the pork and add the rice to the remaining sauce. Continue cooking on high for 15-20 minutes or until very little liquid remains.
- Serve sliced pork over rice. Add veggies!
