This easy to prep and quick to cook one-pan dish is a great make-ahead meal that’s convenient to store and reheat. This can also serve as a good high-protein option for a busy weeknight family meal.
LOW-CARB CHEESEBURGER SKILLET
Makes 4 servings

Ingredients
2-3 large Zucchini
1 lb Ground Beef
1/2 C (56g) Shredded Cheddar (or your choice of cheese)
Your favorite burger seasoning, seasoned to taste
Directions
1. Cube and cook the zucchini.
(Air Fryer – 400 for 20-25 minutes)
(Oven – 450 for 15-20 minutes)
(Stovetop – Skillet over medium-high for 12-15 minutes)
2. Season and brown the ground beef in a large skillet. (Optional: add an onion)
3. Add the cooked zucchini, ground beef, and cheese to an oven-safe skillet to broil or heat on the stovetop with a cover until the cheese is fully melted.
4. Top with your regular burger condiments or anything you’d like.
