Welcome the weekend with a deliciously decadent French toast made with high-fiber bread topped with a protein-packed mixture of Greek yogurt and your favorite vanilla protein powder. So good, you won’t even miss the syrup!

French Toast with Protein Topping

Serves: 4

  • 2 large eggs, whisked
  • 1 cup (240ml) skim milk
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 8 slices (224g) thinly sliced, high-fiber bread
  • ½ tbsp (7g) coconut oil
  • 1 cup plain Greek Yogurt, nonfat
  • 2 scoop (30g) vanilla protein powder (whey or plant-based)
  • ½ cup (75g) blueberries
  • 1 cup (150g) strawberries, sliced


  1. In a shallow dish, whisk together eggs, milk, vanilla, and cinnamon.
  2. Dip both sides of each bread slice into the egg mixture.
  3. Heat oil in a nonstick fry pan over medium heat. Add the bread slices, being careful not to crowd the pan. Cook for 3-5 minutes per side or until browned. Repeat with remaining slices.
  4. Meanwhile, combine yogurt and vanilla protein powder. Top toast with yogurt mixture and berries.
  5. Enjoy!
