Ingredients
- 3 large bell peppers
- 1 ½ c liquid egg whites
- 1 c Jimmy Dean breakfast turkey sausage crumbles
- 4 oz fat-free cream cheese
- 1/4 c salsa
- 1/2 c fat-free shredded cheddar
- 1 jalapeno, sliced (optional)
Directions
1. Preheat oven to 400F.
2. In a large skillet, heat pre-cooked turkey sausage over medium heat (2-3 minutes) before adding egg whites and reducing heat to low-medium.
3. While egg whites and sausage cook, remove seeds and slice each bell pepper into 8 vertical slices (cut into quarters and then cut those in half, vertically).
4. When the egg whites are no longer runny, add cream cheese and salsa. Stir until everything is blended evenly.
5. Fill each pepper slice or “nacho boat” with the egg white mixture. (Push the pepper boats together before filling and slicing them with a knife post-baking to separate them. This helps minimize spilling or run-off during cooking.)
6. Top with fat-free cheddar and sliced jalapeno. Place in the oven for 20 minutes. Serve warm.
