Instant Pot Sloppy Joes
Makes ~9 Servings

Ingredients:
Meat:
2 lbs lean ground beef
2 tbsp (30g) minced garlic
1/4 c white onion, diced (optional)
1/2 tsp salt and pepper
Sloppy Joe Sauce:
3/4 c (204g) no sugar ketchup
1/4 c (60g) mustard
2 tbsp (30mL) apple cider vinegar
1/4 c (60mL) Walden Farms pancake syrup
4 tsp chili powder
1-2 tsp cayenne pepper (to taste)
Optional thickener: 1 scoop (32g) Protein Powder, unflavored
Directions:
1. Set Instant Pot to saute. Spray with nonstick cooking spray and
add minced garlic, onion, salt/pepper, and ground meat to the pot. Cook until meat has nearly cooked through, around 5 minutes.
2. While meat is cooking, mix the remaining sauce ingredients together in a bowl.
3. After meat has browned, give it one last stir before adding sauce to the top. DO NOT stir. Leave the sauce on the top, close the Instant Pot, and cook on manual for 10 minutes with a quick release.
4. The sauce should look thick and still be on top of meat mixture, almost like the top of a meatloaf. Using a rubber spatula, fold sauce into the meat, mixing well. It should lose its thickness and blend completely.
5. Serve on your choice of hamburger bun or on its own with side of choice. (Not included in the macros)
