French Toast with Protein Topping

Ingredients:
Serves: 4
- 2 large eggs, whisked
- 1 cup (240ml) skim milk
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 8 slices (224g) thinly sliced, high-fiber bread
- ½ tbsp (7g) coconut oil
- 1 cup plain Greek Yogurt, nonfat
- 2 scoop (30g) vanilla protein powder (whey or plant-based)
- ½ cup (75g) blueberries
- 1 cup (150g) strawberries, sliced
Preparation:
- In a shallow dish, whisk together eggs, milk, vanilla, and cinnamon.
- Dip both sides of each bread slice into the egg mixture.
- Heat oil in a nonstick fry pan over medium heat. Add the bread slices, being careful not to crowd the pan. Cook for 3-5 minutes per side or until browned. Repeat with remaining slices.
- Meanwhile, combine yogurt and vanilla protein powder. Top toast with yogurt mixture and berries.
