CAJUN SHRIMP & SAUSAGE SKILLET

Ingredients

  • 12oz frozen cooked shrimp
  • 3 turkey or chicken sausage links
  • 2 zucchini
  • 2 yellow squash
  • 4 oz sliced mushrooms
  • 1 red bell pepper
  • 1 lemon
  • 2 tbsp Cajun seasoning

Directions

  1. Remove shrimp from the freezer and place in a strainer under cool running water for 5 minutes. (Or thaw ahead of time.)
  2. Heat a large skillet over medium-high heat with nonstick cooking spray.
  3. Slice the sausages and add them to the skillet with the mushrooms.
  4. Slice or chop (personal preference) the zucchini, pepper, and yellow squash before adding them to the pan. Add the Cajun seasoning and stir well.
  5. Once the shrimp has thawed, add it to the skillet and juice a lemon over the pan. Stir well.
  6. Reduce heat and simmer for 3-4 minutes.
  7. Weigh the total finished product and portion by weight according to your serving size needs.
