CAJUN SHRIMP & SAUSAGE SKILLET

Ingredients
- 12oz frozen cooked shrimp
- 3 turkey or chicken sausage links
- 2 zucchini
- 2 yellow squash
- 4 oz sliced mushrooms
- 1 red bell pepper
- 1 lemon
- 2 tbsp Cajun seasoning
Directions
- Remove shrimp from the freezer and place in a strainer under cool running water for 5 minutes. (Or thaw ahead of time.)
- Heat a large skillet over medium-high heat with nonstick cooking spray.
- Slice the sausages and add them to the skillet with the mushrooms.
- Slice or chop (personal preference) the zucchini, pepper, and yellow squash before adding them to the pan. Add the Cajun seasoning and stir well.
- Once the shrimp has thawed, add it to the skillet and juice a lemon over the pan. Stir well.
- Reduce heat and simmer for 3-4 minutes.
- Weigh the total finished product and portion by weight according to your serving size needs.
