Almond Parmesan Fish Sticks and Chips

Ingredients:
Chips:
- 1 medium (200g) potato, cut into wedges
- 2 medium (390g) zucchini, cut into sticks
- 2 medium carrots (120g), cut into sticks
- 1 tsp paprika
- Pinch sea salt and pepper
- Cooking spray
Fish sticks:
- 4 medium cod filets, cut into 1-inch strips
- ½ cup almond flour
- 6 tbsp parmesan cheese, grated
- 1 tsp smoked paprika
- 1 large egg, whisked
- Pinch sea salt and pepper
- Cooking spray
- Parsley, chopped to garnish (optional)
Directions:
- Preheat the oven to 400°F/204°C. Line 2 baking sheets with foil. Spray both sheets with cooking spray.
- Add potato, zucchini, and carrots onto the baking sheet. Spray liberally with cooking spray. Season with paprika, salt and pepper. Bake for 25-30 minutes, or until golden and crisp, turning halfway through.
- Meanwhile, make the fish sticks: add almond flour, cheese, and paprika to a shallow dish. Add the whisked egg to a second dish.
- Dip the fish into the egg, and press into the almond flour mixture, being sure to cover all sides of the fish.
- Place fish on a baking sheet.
- Bake 11-14 minutes, flipping and spraying with additional cooking spray halfway through
- Serve fish with “chips” and optional parsley. Enjoy!
